Baked doughuts with vanilla glaze

100g (3½oz) vegetable oil
2 large (US extra large) eggs
100g (½ cup) caster (superfine) sugar
1 tsp vanilla extract
100g (¾ cup) self-raising (self-rising) flour
ICING:
100g (¾ cup) icing (confectionersâ) sugar
½ tsp vanilla extract
½ tsp ground cinnamon
DECORATION:
3 tbsp sprinkles
1 In a large mixing bowl, whisk the oil, eggs, sugar, and vanilla together until combined. Sift in the flour and whisk again until you have a smooth batter.
2 Preheat the air fryer to 180°C/350°F for 3 minutes.
3 Fill 12 silicone doughnut moulds three-quarters full with batter. Transfer to the air fryer basket and bake for 8 minutes at 180°C/350°F until lightly golden and firm to touch.
4 Remove the baked doughnuts from the moulds and leave to cool on a wire rack.
5 Meanwhile, make the icing. Sift the icing sugar into a bowl, then combine with the vanilla, cinnamon, and 1 tablespoon water until smooth.
6 One by one, dunk the top of each cooled doughnut into the icing, then place back onto the wire rack, and scatter with sprinkles. Leave for 30 minutes for the icing to set, then serve.
KEEP IT The doughnuts will keep for up to 5 days in an airtight container.
